An Impressive 36-Hour Veal Shoulder for Yom Tov
Looking for something impressive for second days?
This one takes 36 hours, but don’t let that scare you. Chef Austin’s sous vide veal can be made three or four days ahead, and the cabbage, celeriac puree and savory “adult applesauce” can all be prepped in advance too. It’s definitely for the more ambitious cooks, but even if you never make the whole dish, you’ll pick up plenty of great chef tips along the way.
