We're back with another episode in honor of Rosh Chodesh Nissan. Chef Joseph has a Passover challenge for Tierra Sur’s new Sous Chef, Austin: cooking a chicken nanban dish using only kosher for Passover ingredients. Chicken nanban is crispy, deep-fried chicken dressed in a tangy sauce and served with homemade tartar sauce.
Get the recipe:
Nanban Chicken:
Egg wash
Chicken breast or Thigh
Potato Starch
Nanban Sauce:
1/2 cup Jeunesse Pink Moscato
1 cup Apple Cider Vinegar
2 tbsp Salt
1/2 cup Sugar
1/3 cup Water
(optional: add minced garlic and ginger for extra flavor)

This recipe looks really great, especially the Kosher for Passover variation. Since this came out I believe there is a new substitute for Soy Sauce, which is Coconut Aminos. I add those to a lot of my cooking during the year to great effect. I am sure Chef Austin would appreciate not having to recreate the wheel.
