Raizy’s Favorite Eggplant

This eggplant salad is not only one of Yussi’s most requested recipes, it’s also his wife Raizy’s favorite! Watch him create this delicious Mediterranean eggplant dish with homemade techina!

2 eggplants, partially peeled
3/4 cup olive oil
17 whole garlic cloves, divided
2 1/2 teaspoons salt, divided
1/2 teaspoon pepper
1 teaspoon smoked paprika
1/2 teaspoon cumin
1 jar tehina paste
2 lemons
1/2 teaspoon zaatar
pinch cayenne pepper
1/2 teaspoon hawaij (optional)
8-10 oz ice water
Fresh parsley
1 teaspoon vinegar
2 tablespoons sugar
Pomegranate seeds
Chives
