Directions

Prepare the Panfried Salt and Pepper Lokshen Kugel

  1. Bring a pot of water to boil. Cook medium and fine noodles together until extra mushy (not al dente). Strain and rinse.

  2. In a large mixing bowl, add lokshen with salt, pepper, and sugar and taste. If you like it extra peppery or salty, now is a good time to add.

  3. Whisk the eggs and mix well with noodles.

  4. Heat 1/3 cup oil in a nine-inch frying pan.

  5. Add the pasta mix to pan on medium flame, cover, and let cook for approximately 20 minutes.

  6. With spatula, try to move the kugel around a bit to make sure it is not sticking to pan, and flip on to plate.

  7. Return the kugel to the pan for another 15 minutes, uncovered, so it stays nice and crispy.

This kugel is on my extra kugel rotation. It is just plain awesome. Every time without fail. I do put in a little more salt and sometimes sprinkle some kosher salt on my slice. And maybe a drop more than a pinch of sugar. My kids say it tastes like matzah brei.and that’s yum

The pepper is DEFINTELY a mistake. Try it once, you'll see.

Can this be baked in the oven? If yes on what temp?

You can, but it won't have the same crisp. Try to do it on 400 degrees Fahrenheit for 20-40 minutes. Keep an eye on it!

I just made this with 2 tea spoons of salt and half cup of oil.... kids loved it

No, however if you don't like things as salty you can reduce the salt and pepper.
