Simple Sweet Lukshen Kugel

Ingredients

Main ingredients

  • 3 quarts water

  • 1 and 1/2 tablespoons salt

  • 11 ounces Manischewitz Fine Noodles or other thin noodles (or 1/2 package wide and 1/2 package thin noodles)

  • 5 eggs

  • 1/2 cup oil

  • 3/4 cup sugar

Directions

Prepare the Kugel

Bring water to a boil and add salt and noodles. Cook for 8–10 minutes, drain, and rinse with cold water.

Combine noodles with remaining ingredients. Place into lined 9- x 13-inch pan.

Bake at 350 degrees Fahrenheit for one hour. Cover with aluminum foil immediately to avoid hardening of crust.

Variation:

  1. Omit cinnamon, add juice and rind of 1 lemon. 2. Omit bread crumbs, add 3/4 cup ground almonds or 1/2 cup ground walnuts. 3. Add raisins.
