Sweet noodle kugel, known by some as lukshon kugel, is one of the most enduring Ashkenaz Jewish foods, and with this easy recipe you too can prepare it right at home. Noodle kugel is often made with dairy ingredients, but this version is dairy free, making it suitable to serve at a meat meal or for those with dairy allergies.
3 quarts water
1 and 1/2 tablespoons salt
11 ounces Manischewitz Fine Noodles or other thin noodles (or 1/2 package wide and 1/2 package thin noodles)
5 eggs
1/2 cup oil
3/4 cup sugar
2 apples, shredded
1/2 cup Gefen Bread Crumbs, toasted
1 teaspoon vanilla sugar
1/2 teaspoon Gefen Cinnamon (optional)
Bring water to a boil and add salt and noodles. Cook for 8–10 minutes, drain, and rinse with cold water.
Combine noodles with remaining ingredients. Place into lined 9- x 13-inch pan.
Bake at 350 degrees Fahrenheit for one hour. Cover with aluminum foil immediately to avoid hardening of crust.
