Remember when the viral feta pasta bake was all over the internet? Well, it was delicious, and over the last year or so I have tweaked that idea to get one of the best sheet pan dinners that I make on repeat.
But this time, I make more of a feta mixture rather than throwing the whole block into the pan. It just works better, and the dish is more balanced.
I absolutely LOVE the combination of feta and zaatar. It’s delicious eaten plain together, or mixed into salads and dips, but when cooked into this sheet pan dish it's just next level. It gives a warm, delicious, cheesy, full-of-flavor bang with every bite without feeling heavy.
Why gnocchi and not regular pasta? Because I love the chewy bite that gnocchi gives with this dish. It just works so well. But of course you can sub with pasta.
This dish is fantastic for the upcoming 9 Days and works as a full meal or as a side dish with any fish.
This dish is also super easy to make, a must-try for dinner tonight.

Greek Zaatar Gnocchi Sheet Pan Dinner
Gnocchi and Veggies:
1 package Tuscanini mini gnocchi, cooked according to package
1 large red onion, sliced
1 large red pepper and 1 large green pepper, cut into bite-size pieces
1 can chickpeas, drained
For the Feta Mixture:
1 block Taamti Feta cheese
2 tablespoons zaatar
3 tablespoons oil
2 tablespoons honey (optional)
Directions:
1. On a large baking sheet, add all your gnocchi and veggie ingredients.
3. In a bowl, whisk together all the feta mixture ingredients till you get a nice creamy consistency.
4. Then pour the feta mixture over everything and mix well with your hands.
5. Spread it all out on the baking sheet and bake on 350 degrees Fahrenheit for 20 to 25 minutes.
Serve and enjoy!
