I am one of those people who actually prefer milchigs! That said, I do make a number of fleishig dinners (meatloaf, beef stew, chicken...) on my regular rotation. So I do still have to make adjustments this week, and it does take extra thought and planning. I usually have very little time to cook dinner, so it has to be quick! Frozen, precut veggies are one of my favorite shortcuts.
Tonight, I plan to make a variety of cheese omelets (I call it Green Eggs and Cheese) to suit the different tastes of my family: veggie-forward for the adults, and super cheesy for the kids.

For the kid version:
My toddler loves to help me cook, so I crack about 6 eggs into a small bowl and let her beat them one at a time. Then I add some spices (a little pepper, maybe some garlic) and pour them into my 12-inch frying pan. Sprinkle shredded cheese all over and let it cook for about 4 minutes, then flip in half and press down on top with the spatula so it flattens and the cheese melts really nicely inside. Cook for another 3-4 minutes.
(I haven't tried this yet, but my kids do actually like black beans, so I might make this recipe and see if they eat it!)
For the adult version:
Frozen spinach
Frozen diced peppers
Eggs
Shredded cheese
Stir fry the veggies until they're defrosted and then add about 6 beaten eggs to the pan, then sprinkle the cheese, and follow the same steps as above.
I like to put out platters of sliced fruits and veg, so everyone can choose what they like, rather than a mixed salad. Sliced apples, grapes, peaches, cucumbers, tomatoes, peppers, whatever works for you and your family!
A fruity Greek yogurt smoothie is a fun addition that adds nutrients while also making everyone excited and happy for dinnertime to arrive!

Vary the amounts based on the size of your blender, but for mine I usually do:
3-4 chunks of frozen banana
4-5 frozen strawberries
3-4 chunks of frozen Beleaves Passionfruit (I am SO excited about the seedless one because I hate the seeds, but feel free to use the seeded if you like the crunch. I know some people do, for some reason.)
5 ounces Greek yogurt (I like vanilla, otherwise you overpower the other fruit flavors)
Dash of cinnamon
Optional- a small scoop of protein powder, to taste
If you like it sweeter, add a little maple syrup, but the bananas add a lot of sweetness already.
Add enough milk to fill up to the max fill line.
Blend until smooth and drinkable! I usually have to end up doing a refill!
