All your favorite southwestern flavors stuffed into brunch! Use as much of each ingredient as you like!
2 eggs
Salt
Pepper
Garlic Powder
Onion Powder
Shredded Mozzarella and/or Cheddar Cheese
Taco Seasoning
Canned Black Beans, drained and rinsed
Avocado, sliced
Cilantro
Salsa or Taco Sauce, for serving
Beat 2 eggs with a pinch of salt, pepper, garlic powder, and onion powder. Pour onto a nonstick pan over medium heat and let set for 1-2 minutes. Sprinkle cheese and taco seasoning over eggs and cover until the cheese melts.
Turn flame to low. Place black beans and avocado slices over half of the eggs and carefully fold the other half over. Remove from heat and top with fresh cilantro. Serve immediately with salsa or taco sauce.
