Some of our favorite summer dinners naturally happen to be dairy or pareve, so instead of making them all season long, we intentionally save them for the 9 Days. By then, we've usually had our fill of grilled chicken, burgers, and barbecue, and everyone is ready for something lighter and fresher. Suddenly, a golden, flaky quiche served with juicy tomatoes picked straight from the garden, roasted zucchini, and toasted baguette slices piled high with a bright tomato-lemon bruschetta salad doesn't feel like a compromise, it feels like exactly what we've been craving.
