Apple Cinnamon Crumb Muffins

Ingredients

Muffins

  • 1 and 1/2 cups Glicks Flour

  • 1/2 cup sugar

  • 1/4 cup brown sugar

  • 2 teaspoons baking powder

  • 1 and 1/2 teaspoons Gefen Cinnamon

  • pinch of salt

  • 2 eggs

  • 1/3 cup milk or non-dairy milk, such as Gefen Oat Milk

  • 1/3 cup oil

  • 1 teaspoon vanilla

  • 1 apple, peeled and diced

Crumb Topping

  • 2 tablespoons sugar

  • 3 tablespoons butter or non-dairy butter

Directions

Preheat your oven to 350 degrees Fahrenheit. Line a cupcake tin with paper liners.

In a medium bowl, whisk together the flour, sugar, brown sugar, baking powder, cinnamon and salt. Add the eggs, milk, oil, and vanilla and mix until smooth. Stir in the apples. Fill cupcake liners 3/4 the way with batter.

Prepare the crumb topping. Combine all ingredients in a bowl, using a fork or your fingers to make crumbs. Sprinkle over the batter.

Bake for 25 minutes. Allow to cool and enjoy!

Notes:

Allow muffins to cool completely before storing, as trapped steam can make the crumb topping soggy. Keep at room temperature in an airtight container for up to 2 days, or refrigerate for up to 5 days to maintain freshness. For longer storage, freeze in a sealed bag or container for up to 2 months; thaw at room temperature before serving.
