As I’ve mentioned in the past, I’ve been in the muffin business for over 17 years. My passion is developing wholesome muffin flavors with minimum fat and sweeteners, without compromising flavor or texture. If an apple a day keeps the doctor away, these should do that for sure!
Yields 12 muffins
2/3 cup old-fashioned oats
1/3 cup + 1 tablespoon soy milk
2 cups Shibolim Whole Wheat or spelt flour
1 full teaspoon Gefen Cinnamon
3/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 and 1/3 cups Glicks Unsweetened Applesauce
2 eggs
1/3 cup oil (you can use Tonnelli Avocado Oil or other oil of your choice)
2 tablespoons honey (preferably organic)
3 tablespoons maple syrup (preferably organic)
1 teaspoon vanilla extract
1 Yellow Delicious apple, unpeeled and diced
1/3 cup pecans, finely chopped
1/2 teaspoon Gefen Cinnamon
1 tablespoon brown sugar
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
Combine the oats and soy milk in a small bowl. Let sit for 10 minutes.
In a large bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt. Make a well in the center. Add the oat mixture, followed by the applesauce, eggs, oil, honey, maple syrup, and vanilla. Mix just until combined. (This is the key to fluffy muffins — not overmixing.) Fold in the diced apple.
Spoon the mixture into a muffin pan lined with paper liners.
Mix together crunch ingredients in a small bowl and sprinkle over the top of each muffin.
Place the muffin pan in the oven and bake for five minutes (this aerates the muffin). Reduce oven temperature to 350 degrees Fahrenheit (175 degrees Celsius) and bake an additional 15 minutes.

One of the best healthy muffins I ever made. moist and chewy. I made it with whole spelt flour and subbed some of the flour with protein powder.

A third of the muffin stuck to the paper, so spray with pam before you put the batter in.
