This delicious salad is perfect for during the week when you want to whip up something quick and easy. Combine cabbages, apples, scallions, pine nuts, and cranberries in a large bowl.

Whisk together mayonnaise and remaining ingredients; toss with cabbage mixture. Cover and chill until serving.
Tip:
To toast nuts or seeds without burning them place them on a baking sheet in a shallow layer and put them in the oven while it’s preheating for something else. When the oven reaches the right temperature, the nuts are perfectly toasted!
