Apple Coleslaw

This delicious salad is perfect for during the week when you want to whip up something quick and easy. The apple and red cabbage add a nice color contrast, but you can use any fruit and vegetable combinations you have available. If you have time, this salad tastes even better when it sits for a half hour.

Start Cooking

Put the Coleslaw Together

  1. Combine cabbages, apples, scallions, pine nuts, and cranberries in a large bowl.

  2. Whisk together mayonnaise and remaining ingredients; toss with cabbage mixture. Cover and chill until serving.


To toast nuts or seeds without burning them place them on a baking sheet in a shallow layer and put them in the oven while it’s preheating for something else. When the oven reaches the right temperature, the nuts are perfectly toasted!
