Diets This delicious salad is perfect for during the week when you want to whip up something quick and easy. The apple and red cabbage add a nice color contrast, but you can use any fruit and vegetable combinations you have available. If you have time, this salad tastes even better when it sits for a half hour.
1 bag coleslaw mix
2 apples, sliced thinly
1/2 bag shredded red cabbage
2 scallions, sliced or 1/4 red onion, thinly sliced
2 tablespoons pine nuts, toasted
1/3 cup Gefen Mayonnaise
2 tablespoons brown sugar
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
Combine cabbages, apples, scallions, pine nuts, and cranberries in a large bowl.
Whisk together mayonnaise and remaining ingredients; toss with cabbage mixture. Cover and chill until serving.
