Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.

In a bowl, combine brown sugar, cinnamon, and vanilla sugar in a small bowl and set aside.

In a separate bowl, mix the apples and oil together.

Place a puff pastry square on the tray and cut it diagonally to make two triangles.

Repeat with the other puff pastry squares.

Distribute the brown sugar mixture evenly over the eight triangles.

Place an apple slice on the wide end of the triangle and roll it up, rugelach-style.

Bake for 20–25 minutes, until golden.
9.
Let it rest for five minutes and enjoy.
