A delicious, easy to prepare apple cake.
1 and 1/2 cups Gefen Canola Oil
2 cups granulated sugar
3 eggs
1 teaspoon vanilla
4 cups Glicks All-Purpose Flour
1 teaspoon kosher salt
1 teaspoon cinnamon
1 teaspoon baking soda
1 cup walnuts
4 small apples (Granny Smith, Gala or a combination), about 12 ounces
Preheat oven to 350 degrees Fahrenheit.
Coarsely chop and toast the walnuts. Set aside to cool. Peel, core and dice the apples into a half-inch dice.
Sift together the flour, salt, cinnamon and baking soda.
Grease and flour, or spray with baking spray, a nine-inch bundt pan.
In a large bowl, or in the bowl of a standing mixer, beat together the oil and sugar. (Use the paddle attachment if you’re using a standing mixer.)
Add eggs and beat until creamy.
Add vanilla.
Stir the flour mixture into the batter and mix well.
Add the walnuts and diced apples. Stir to blend.
Pour batter into cake pan, using a spatula to distribute batter evenly. Bake for one hour and 15 minutes, or until golden on top and a knife inserted into the cake comes out clean.
Let cool in pan about 10 minutes, then invert onto wire rack and cool completely.
