4 slices salmon
1/4 cup apricot jam, such as Tuscanini Apricot Fruit Spread
1/2 cup packed cilantro, cleaned and chopped
1/2 lemon, juiced, plus the zest of 1 lemon
2 tablespoons oil
1 teaspoon salt
1/3 cup pistachios, crushed
non-stick cooking spray
Preheat oven to 425 degrees Fahrenheit. Line a nine- x 13-inch baking dish with Gefen Parchment Paper.
Place salmon slices on the parchment.
Whisk jam, cilantro, lemon juice and zest, oil, and salt in a small bowl.
Brush mixture over salmon. Finish off by sprinkling pistachios on each piece and spray with cooking spray.
Bake for 14 minutes, then broil for an extra minute and a half.
