These are just the various cheeses and fruits and jams and crackers we chose for our boards, but you are encouraged to use the ones that are your favorites along with others that might be new and fun to try. Creating these boards is more about the concept than specific ingredients. It’s like a little dairy-filled playground for you to get creative with. Either way, it’s totally up to you. Part of the fun of this recipe is experimenting and seeing what surprises may occur!
Decide on what cheeses you want to use and place them in different areas on a large board or plate. Fill in the spaces around the cheeses with slices of fruit, dried fruit, nuts, grape clusters, crackers, and anything else that may sound fun or interesting. Your creativity is your guide. Place the jams in small bowls and serve alongside your boards.
hard cheese board: Parmesan, aged Cheddar, Pecorino Romano, Manchego
soft cheese board: Brie, Camembert, Blue Cheese, Chevre Goat Cheese
assorted fruit and melons: green apple, sweet apples, kiwi, kumquat, Asian pears, regular pears, goose berries, different types of grapes, apricots, different melons, any type of fruit will work
assorted dried fruit and nuts: dates, dried cranberries, dried apricots, almonds, pistachios
jams: Tuscanini Forest Fruit Preserves Spread, Tuscanini Apricot Fruit Spread, Tuscanini Strawberry Fruit Spread
assorted crackers: Tuscanini Parchment Crackers, Kedem Whole Wheat Crackers
1 container of mini fresh Mozzarella balls in brine
2-3 tablespoons chopped olives
2-3 tablespoons chopped Tuscanini Sun Dried Tomatoes in olive oil
2 tablespoons chopped parsley
1 tablespoon Tuscanini Balsamic Reduction
1 tablespoon Extra Virgin Olive Oil
salt, to taste
pepper, to taste
3 and 1/2 tablespoons sour cream
2 tablespoons Greek Yogurt
2 garlic cloves
2 tablespoons rough chopped chives
1 tablespoon Tarragon Leaves
1/4 cup Ta’amti Feta
1 cup of whole fat Ricotta
2 tablespoons honey
1 tablespoon lemon zest
1 pinch of salt
Cut the mozzarella balls in half and add to a bowl.
Add the rest of the ingredients together in a bowl and mix.
Cover and refrigerate for 30 minutes. Serve and enjoy.
Using a blender or stick blender, blend all the ingredients together.
Place in a container, cover with plastic wrap and refrigerate for at least 30 minutes.
Serve with crackers or chips.
