This is the perfect shalosh seudos salad. It’s light but filling—and addictive!
1 (11.6-ounce) bag Gefen Instant Brown Rice Noodles
1 bunch scallions, sliced
1/3 cup shelled and cooked edamame
1 and 1/2 cups shredded red cabbage
black and white sesame seeds
4 tablespoons Glicks Soy Sauce
2 teaspoons toasted sesame oil
2 tablespoons Gefen Vinegar
4 tablespoons oil
4 teaspoons sugar
Cook noodles according to package instructions. (Crack the noodles before adding to the water so they don’t end up being long strands, which won’t mix well with the vegetables.)
In a large bowl, combine scallions, edamame, and cabbage. Rinse noodles with cold water, then add to the vegetables.
In a small jar, shake dressing ingredients together until fully combined. Pour the desired amount over the salad and toss to combine. Sprinkle sesame seeds on top.
Best served at room temperature.
