Baked Sweet Potato Tacos

There are so many fun ways to serve taco meat! I figured, why not take it up a notch and serve it nestled in a sweet potato? The savory, pungent flavors of the meat paired with the sweet potato are a winner.

Directions

Prepare the Baked Sweet Potato Tacos

1. In a medium pan, brown beef for approximately seven minutes, until mostly brown.
2. Add sauces and simmer for about 15–20 minutes, until cooked through and thickened.
3. Pierce sweet potatoes with a fork. Place in a pan with water.
4. Cover and bake at 350 degrees Fahrenheit for one hour and 30 minutes to two hours, until very soft.
5. In a bowl, mash avocado together with lime juice.
6. Cut open each sweet potato most of the way to create a wedge. Place some meat, avocado, tomato, and jalapeño pepper inside.

Tips:

The beef freezes amazingly, I always make a double batch to freeze some.

Variations:

You can use regular potatoes, or skip altogether and use taco chips or rice.
