Diets There are so many fun ways to serve taco meat! I figured, why not take it up a notch and serve it nestled in a sweet potato? The savory, pungent flavors of the meat paired with the sweet potato are a winner.
1 and 1/2 pound ground beef
1/2 cup taco sauce (or barbecue sauce, such as Gefen)
2 tablespoons hot sauce
4 sweet potatoes
3 tablespoons water
1 avocado
1 tablespoon Heaven & Earth Lime Juice
1 tomato, diced
1 jalapeño pepper, sliced (optional)
In a medium pan, brown beef for approximately seven minutes, until mostly brown.
Add sauces and simmer for about 15–20 minutes, until cooked through and thickened.
Pierce sweet potatoes with a fork. Place in a pan with water.
Cover and bake at 350 degrees Fahrenheit for one hour and 30 minutes to two hours, until very soft.
In a bowl, mash avocado together with lime juice.
Cut open each sweet potato most of the way to create a wedge. Place some meat, avocado, tomato, and jalapeño pepper inside.
