Basmati Rice with Orange and Cranberries

Ingredients

Basmati Rice

  • 2 cups basmati rice (either white or brown)

  • 1/2 cup dried cranberries

  • 2 tablespoons Gefen Olive Oil

  • 1 Spanish onion, diced, or 1 cup pearl onions, peeled

  • 1/2 teaspoon ground ginger

  • 1 tablespoon orange zest or dried orange peel

  • 2 teaspoons dried cilantro, 1 and 1/2 teaspoons fresh, cleaned, or 2 cubes Gefen Frozen Cilantro

  • 1 teaspoon salt

  • black sesame seeds (optional)

Directions

Cook the rice in salted water according to package directions.

Meanwhile, place the dried cranberries in a bowl and add boiling water just to cover. Let sit for half an hour. Drain well.

In a pan, heat oil. Sauté the onions, add ginger and sauté one to two minutes longer. Add remaining ingredients to the rice and mix well. Serve warm.

Notes:

For additional color and crunch, stir in two to three tablespoons black sesame seeds before serving.
