Easy bourekas with a unique savory beet filling -perfect to pack up and eat on the go!
Yield: 20 bourekas
Saute onion in oil until it begins to caramelize.
While onion is sautéing grate beets using the large holes on a box grater.
Add garlic and sauté until fragrant.
Add salt and beets.
Sauté until some moisture evaporates. Let cool.
Poke holes in half a side of each pastry square. Add a tablespoon of the beet mixture to the other side and fold over.
Bake at 400 degrees Fahrenheit for 20 minutes or until boureka is golden brown.
Notes:
These are great at room temperature. You can also freeze ahead raw and bake them before serving.
