This is a delicious and nutritious dish that I grew up with in Switzerland. I now live in Lakewood and still do it at least once a week for my family. It is great for breakfast or lunch.

Ingredients

Main ingredients

  • 1 and 1/2 cups quick or old fashioned oatmeal

  • 2 cups liquid, water, milk or parve milk like almond, soy or coconut

  • 1 very large apple

  • 1 medium carrot

  • 1 banana

  • 1 greek yogurt

  • 2 Tbsp honey

  • 2 Tbsp lemon juice

  • 1/4 cup orange juice

  • 1/4 cup chopped nuts of your choice

  • Some fresh or frozen berries like strawberries of blueberries

Directions

Prepare the Birchermuesli

1.

Soak the oatmeal in the liquid, 5 minutes for the quick oatmeal and 15 minutes for the old-fashioned one.

2.

Grate the apple and carrot directly into the mixture. Slice the banana and add all the other ingredients.

3.

Can be refrigerated up to 3 days.
