This is a delicious and nutritious dish that I grew up with in Switzerland. I now live in Lakewood and still do it at least once a week for my family. It is great for breakfast or lunch.
1 and 1/2 cups quick or old fashioned oatmeal
2 cups liquid, water, milk or parve milk like almond, soy or coconut
1 very large apple
1 medium carrot
1 banana
1 greek yogurt
2 Tbsp honey
2 Tbsp lemon juice
1/4 cup orange juice
1/4 cup chopped nuts of your choice
Some fresh or frozen berries like strawberries of blueberries
Soak the oatmeal in the liquid, 5 minutes for the quick oatmeal and 15 minutes for the old-fashioned one.
Grate the apple and carrot directly into the mixture. Slice the banana and add all the other ingredients.
Can be refrigerated up to 3 days.
