Submitted by Shifra Stitzer I love salmon, but I find that often when I cook it the salmon comes out dry or under cooked. A few months ago I created this recipe and it came out amazing!! Every time I make it, it’s perfectly pink inside.
2-3 pounds of salmon
1/3 cup mayo
1/2 Tbsp honey
1 Tbsp mustard
3/4 cup breadcrumbs
1 tsp onion powder
1 tsp garlic powder
1/2 teaspoon salt
Preheat oven to 350F.
Line a metal cookie sheet with tin foil. Spray with oil to coat. Place salmon, skin side down, on pan.
Mix all the mayo ingredients together. Using a spoon or pastry brush, spread mixture onto the salmon.
Mix all the breadcrumb ingredients together. Spread on top of the salmon.
Place in the oven for 20 minutes.
When the 20 minutes are up, turn on the broiler on low and cook an additional 5 minutes. Check to make sure the top isn’t getting too dark.
