Diets 3/4 cup flour
1 cup seltzer
1 pound broccoli florets
1 cup seasoned bread crumbs like Gefen Homestyle Bread Crumbs
Mix together the flour and seltzer.
Place the broccoli in a large bowl and pour the batter over the broccoli. Allow to sit in the batter for 15 minutes, mixing every five minutes to allow the broccoli to get fully coated in the batter.
Then dip each piece of broccoli in the breadcrumbs, so that it is fully covered.
Line a baking sheet with parchment paper, then place cooling racks on the baking sheet. Spray, and place the broccoli on the cooling racks, making sure to leave space between each piece. Spray with cooking spray and bake at 450 degrees Fahrenheit for 30 minutes.
Serve with your favorite dipping sauce.

I realised last minute that I didn’t have seltzer so I switched that out for water, and instead of seasoned breadcrumbs I just flavoured them myself with onion soup mix and paprika. I also used a mix of broccoli and cauliflower.
It was easy to make (although I should have defrosted the veg before) and the taste was pretty good, although I’d have liked a bit more flavour. I suppose that will come from dipping them. I did get a flat part at the bottom of each piece though that tasted more dough-y, but otherwise it was great.
