Broccoli and cheese are a great combo. Crisp on the outside and gooey on the inside, these cheesy broccoli bites are baked to perfection.
1/4 cup oil
1 onion
1 crushed clove garlic or 1 cube Gefen Frozen Garlic
24 ounce Beleaves Chopped Broccoli
1/4 teaspoon salt
pinch black pepper
2 cups shredded cheese
2 eggs
1 cup Gefen Bread Crumbs (or ground almonds for low carb)
Heat oil in a pan on medium flame.
Add onion and garlic and saute for 10 minutes until translucent.
Add broccoli and spices and cook for 45 minutes to one hour, until soft. (Defrost broccoli in advance for shorter cooking time.)
Transfer the vegetables to a bowl. Using a potato masher, mash the vegetables.
Add cheese to the mashed broccoli and mix.
Lightly grease a pan or preheat the oven to 400 degrees Fahrenheit.
Prepare a small bowl with beaten eggs and another bowl with crumbs. (Optionally, mix the eggs and crumbs into the mashed vegetable mixture, instead of coating the balls).
Form balls with the mashed broccoli (omitting the tough stem pieces), then coat with eggs and crumbs.
Fry or bake the balls 10-15 minutes, flipping halfway through.
