The first time I saw Pos’tiv fresh baby spinach and broccoli florets on the produce shelves, I shouted (in my head), “Yes, yes, yes!!” For me (and I’m sure for many others), this was major! You cannot imagine how much more I’ve enjoyed my salads and side dishes since then. Here is one of the ways I enjoy that broccoli.
1/4 cup Gefen Soy or almond milk
2 tablespoons Gefen Lite Mayonnaise (or use sugar-free mayonnaise)
1/2 teaspoon garlic powder, divided
1/2 teaspoon onion powder, divided
1/4 teaspoon black pepper
1/2 cup Gefen Panko Crumbs
3 tablespoons bread crumbs
1/8 teaspoon salt
1 (12-ounce) package Pos’tiv fresh broccoli florets
Preheat oven to 400 degrees Fahrenheit. Prepare a baking sheet by lining it and spraying it with nonstick cooking spray.
In a small bowl, whisk together the soy or almond milk, mayonnaise, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and black pepper.
In a separate shallow bowl, combine panko crumbs, bread crumbs, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and salt.
Holding a broccoli floret by the stem, dip and twist the floret top through the milk mixture to coat; then roll in the crumb mixture. Place coated florets on the prepared baking sheet and repeat until all the florets are coated. Spray lightly with cooking spray.
Bake the florets for 12 minutes. If you like your bites extra crisp or more browned, place them under the broiler for one minute.

Frozen broccoli You can use frozen…I always use frozen when roasting broccoli and its delicious!
