Mr. Spilman of The Kugel Shoppe was kind enough to share his signature recipe for broccoli kugel with us.
2 pounds (910 grams) Beleaves Frozen Broccoli Florets, defrosted
1 small onion
8 eggs
5 ounces (140 grams) oil, such as Manischewitz Grapeseed Oil
1/2 teaspoon Gefen Garlic Powder
salt, to taste
pepper, to taste
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Place broccoli and onion into the food processor. Pulse until blended but not too finely ground. Add the rest of the ingredients and pulse until mixed well.
Spray pan with cooking spray.
Pour mixture into a three-pound (1.36-kilogram) loaf pan.
Bake uncovered until golden brown, approximately one hour.

Can I make these as cupcakes? If so, how long would they need to bake for?
I’d probably bake them between 15-25 minutes. Keep checking them every 5 minutes until they are done.
