Brown & Wild Rice with Candied Fruit

Start Cooking

For the Rice

  1. Heat oil in a large pot over medium heat.

  2. Add onion and garlic and saute until translucent, about 7 to 10 minutes.

  3. Add apricots and saute 3 to 4 additional minutes until apricots begin to turn golden.

  4. Add rice and stock to the pot. Season with salt.

  5. Raise heat and bring to a boil. Cover and reduce heat to low. Simmer for 45 minutes or until all liquid is absorbed.


Don’t want to be attentive to the stove? Instead of adding rice and stock to the pot, transfer the sauteed onion-fruit mixture, rice, and stock to a pretty oven-to-table dish. Cover tightly and bake at 375ºF for 90 minutes.
