Don’t mistake this recipe for biscotti. This is real, old-fashioned almond-flavored mandelbrot! Yield: approximately 3 dozen
1 cup sugar
3 eggs
6 tablespoons oil
zest of 1 lemon (optional)
1 teaspoon Gefen Almond Extract
2 and 3/4 cups Mishpacha Flour
1 tablespoon baking powder
1 teaspoon baking soda
pinch of salt
1/2 cup Gefen Ground Almonds
Preheat oven to 375 degrees Fahrenheit.
In the bowl of an electric mixer, cream sugar, eggs, and oil. Add the rest of the ingredients and mix until well incorporated.
Form into three long logs.
Bake for 35 minutes, until lightly browned. Let cool.
Slice into 3/4-inch-wide slices.
