Cabbage and Ramen Salad

Ingredients

Dressing

Topping

  • 2 tablespoons black and white sesame seeds

  • 1 package ramen noodles, flavor packet discarded

Salad

  • 1 bag purple cabbage

  • 1 carrot, julienned

  • 1 red pepper, diced

  • 1 avocado, peeled and cubed

  • 1/2 red onion, sliced thinly

Directions

Prepare the Cabbage and Ramen Salad

1.

Combine dressing ingredients in a container and whisk or shake well to combine.

2.

Preheat oven to 350 degrees Fahrenheit.

3.

Break noodles into small chunks. Place sesame seeds and broken noodles on a sheet pan and bake 10 minutes or until toasted.

4.

Place cabbage, carrots, pepper, avocado, and onions in a large bowl. Toss with dressing.

5.

Top with toasted ramen noodles and sesame seeds. Serve immediately.

This salad is an absolute hit. Made it as a contribution to a party and the salad bowls were linked clean!

can I make this in advance with skipping the avocado?

This salad can not be made in advance since the ramen would get very soggy from the vegetables and dressing.
