This recipe is winter’s answer to barbecue! It’s a great way to get that smoky flavor while using a grill pan. Plus the ingredients are simple. Grilled chicken is one of those things we make because it’s easy and convenient and quick to prepare—but we’re also always looking for ways to make it more exciting and flavorful. This is one of those ways! And you don’t need to marinate it in advance; the whole recipe comes together in the time it takes to grill the chicken.
1 and 1/2 pounds boneless, skinless chicken thighs
1 teaspoon salt
coarse ground black pepper
3 cloves garlic
1 tablespoon Tuscanini Olive Oil
2 tablespoons Gefen Yellow Mustard
3 tablespoons Haddar Brown Sugar, packed
3 tablespoons Glicks Ketchup
1 teaspoon liquid smoke
In a bowl, combine chicken, salt, pepper, garlic, and olive oil.
In a saucepan, whisk together all sauce ingredients.
Heat a grill pan over high heat. Meanwhile, heat the sauce over medium-high heat.
When the grill pan is hot, add chicken and brush generously with the sauce. Cook for about four minutes, basting again with sauce halfway through. Flip chicken and baste once more with sauce. Continue until chicken is cooked through. It should have nice grill marks on both sides.
The sauce should be thickened by now. Serve chicken with extra sauce on the side for dipping.
