This citrusy and sweet dressing brightens up almost any kind of salad. Use it for a weekday as well as Shabbat and Yom Tov.

Ingredients

Carrot-Ginger Dressing

  • 1 medium carrot, peeled and chopped (about 1/2 cup chopped)

  • 1/2 cup freshly squeezed orange juice

  • 1/4 cup Tuscanini Apple Cider Vinegar or rice vinegar

  • 2 tablespoons coconut aminos or salt to taste

  • 2 tablespoons Gefen Unsweetened Applesauce or liquid sweetener of choice

  • 1 and 1/2 tablespoons red onion or scallions, finely chopped

  • 1 and 1/2 tablespoons fresh, grated ginger

Directions

Prepare the Carrot Ginger Dressing

Add all ingredients to a high-speed blender. Blend for about a minute, gradually increasing the speed until very smooth.

Refrigerate until ready to use.

Notes:

To store, refrigerate in an airtight container for up to a week. Shake well before serving.
