An easy, healthy salad of carrots and raisins in a light mayonnaise dressing. Courtesy of Women’s Branch of the Orthodox Union
1 pound carrots, peeled and shredded
1/4 cup raisins
1/3 cup Gefen Mayonnaise (or use sugar-free mayonnaise)
2 tablespoons lemon juice
1 teaspoon salt
pepper, to taste
Combine all ingredients in bowl.
Mix well and chill for several hours.
