One way to get veggies into your family – just don’t tell them that it’s cauliflower.
16 ounces Beleaf Frozen Cauliflower
1 cup sour cream
4 ounces shredded Cheddar cheese
1/2 cup Gefen Cornflake Crumbs (gluten-free, if needed)
1/4 cup diced green pepper
1/4 cup diced red pepper
1 teaspoon salt
1/4 cup grated Parmesan cheese
paprika, for sprinkling
Cook cauliflower according to package directions. Drain well and mash.
Combine next six ingredients. Transfer to a greased 9- x 13-inch pan. Sprinkle with Parmesan cheese and paprika.
Bake, uncovered, at 350 degrees for 30 to 35 minutes.
