This is the good stuff. This low-carb cauliflower and pea soup recipe is hearty, sugar-free and packed full of nutrients. Just brown the flour and simmer onions, carrots, celery, parsley root, cauliflower and peas, and you’ll end up with something good to eat.

Ingredients

Main ingredients

  • 2 tablespoons oil

  • 2 tablespoons flour

  • 1 onion, minced

  • 3 carrots, grated

  • 2 stalks celery, diced

  • 1 parsley root, diced

  • 2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic

  • 1/2 teaspoon paprika

  • 1 tablespoon salt

  • 1 small head cauliflower, cut into florets

  • 1/2 cup peas, frozen or fresh

  • 3 quarts water

Directions

Prepare the Soup

In six quart pot, brown flour in oil, stirring constantly, until light brown.

Add all ingredients and cook for an hour and a half over medium-low heat.

Notes:

Freezes very well.
