1 (14-ounce bag) Heaven & Earth Riced Cauliflower
1 teaspoon salt
2 teaspoons rice vinegar
1 ripe yet firm avocado
1 cucumber, cut into matchsticks
1 mango, thinly sliced
2 carrots, julienned
3/4 pound fresh tuna, cut into cubes
salt, for sprinkling
pepper, for sprinkling
Haddar Teriyaki Sauce, for drizzling
sweet sauce
sesame seeds
Grease a saute pan and add cauliflower rice. Saute for four to five minutes, until rice is cooked through and any liquid in the pan has evaporated.
Stir in salt and rice vinegar.
You can simply dice it or prepare an avocado rose as shown in the video.
Top rice with the avocado, cucumber, mango, and carrots.
Season with salt and pepper. Grease a saute pan and heat over medium-high heat.
Add tuna and sear for 30-60 seconds per side (do not cook all the way through).
Drizzle tuna with teriyaki sauce and toss in the pan, then remove from heat. Add tuna cubes to your sushi bowl.
Drizzle the bowl with sweet sauce and sprinkle with sesame seeds.

Great idea! The carb substitute (cauliflower for rice) worked great in this dish!
