For a year-round variation, try this simple pancake recipe by Draizy Wercberger.
1/2 pound cream cheese
1/2 pound cottage cheese
2 eggs
2 teaspoons salt
1 teaspoon sugar
1 and 1/2 cups Yehuda Matzo Meal
1/2 teaspoon Gefen Onion Powder (optional)
Beat cream cheese and cottage cheese together until smooth.
Add eggs, salt, pepper and sugar.
Stir in one cup matzah meal and mix well.
Form into patties and dip in remaining matzah meal on both sides.
Fry in oil to brown on both sides.
Serve with sour cream.

potato starch can i replace matzoh meal with potato starch
If it was a tablespoon, I would say go ahead. It won’t work in this recipe. It will be very gummy.
