Soufflé is a very delicate dish, what the British might call a “pudding.” It’s best to make it when there are no kids jumping around in the kitchen or workmen pounding on the walls!
4 tablespoons oil
3 (16-ounce) containers cottage cheese
1 teaspoon Gefen Lemon Juice
1 cup Glicks Flour
1 teaspoon Haddar Baking Powder
1/2 cup sugar
6 eggs
cinnamon sugar
Mix oil and cottage cheese in a large bowl. Add remaining ingredients and mix until smooth with mixer or spoon.
Pour into greased nine- by 13-inch pan. Sprinkle with cinnamon sugar.
Bake at 350 degrees Fahrenheit for 45 minutes to one hour or until center is firm.
To serve hot, scoop onto plates; soufflé will be soft. Otherwise, let cool and cut into pieces.
