Easy to dish up and (sigh!) very easy to eat. These are wonderful for a sweet table (dairy, of course!) because they are so much neater to serve than most cheesecakes are. Enjoy! Yields 1 nine- by 13-inch pan.

Start Cooking
Prepare the Crust

Blend butter, brown sugar, and flour with a fork until the combination forms coarse crumbs. Reserve one and a half cups of the mixture for topping.

Pat remaining mixture into one 9- x 13-inch pan. Freeze five minutes. Bake at 350 degrees Fahrenheit for 10 minutes. Remove from oven.
Prepare the Cheese Filling

Combine sugar and cream cheese. Beat in remaining ingredients until smooth.
Bake

Pour cheese filling into crust; top with reserved crumbs.

Bake 30 minutes; cool and chill before cutting.
