waffle cones (see note)
your favorite cheesecake recipe (baked, no-bake, or store-bought will all work)
chocolate – dark, white, or caramel (see suggestions for flavor combinations below)
toppings – chocolate sandwich cookies, caramel mini chips, graham crackers, peanut butter cups (see suggestions below)
sauces – raspberry jam, hot fudge, caramel (see below for suggestions)
Start by preparing as many cones as you will be using. To do so, melt your chocolate and fully coat the inside of the cone (this protects it from getting soggy). Coat the outside rim of the cone with the same flavor of melted chocolate and roll it in the corresponding crushed cookie or candy. Allow the chocolate to harden.
Once set, build your cones. Here are some flavors you can try: ● Raspberry – white chocolate with crushed graham cracker cone. Add raspberry seedless jam to the bottom and inside of cone. Top with a scoop of cheesecake, then add jam and cheesecake alternating to the top. Finish with a drizzle of raspberry and some crushed graham cracker at the top. ● Cookie – dark chocolate with crushed cookies. Drizzle with fudge sauce, alternate sauce, cheesecake, and crushed cookies, to the top. Finish with a drizzle of chocolate and a full size cookie. ● Peanut Butter Cup – dark chocolate cone with crushed peanut butter cup. Drizzle inside with fudge and melted peanut butter. Alternate with cheesecake, crushed peanut butter cups, and sauces to the top. Finish with a drizzle and a full size peanut butter cup. ● Caramel-caramel chocolate with mini caramel chip cone. Drizzle inside with caramel sauce. Alternate cheesecake and caramel to the top and finish with a caramel drizzle.
Refrigerate until ready to serve. Feel free to experiment with fillings and flavors – s’mores, cookie butter, hazelnut brittle, lemon…the possibilities are endless!
