Diets I can attest to the fact that these were a real crowd pleaser, given that as soon as they was finished cooking, tiny little taste testers “magically” appeared and polished them off! A little reminiscent of falafel, a little cheesy, and a little zucchini- perfection!
2 cups grated zucchini (about 2-3 average size), squeezed to remove moisture (see step 1)
1/2 cup oats (use gluten-free, if needed), or any flour
1/2 cup mozzarella
4 scallions, chopped
1 teaspoon salt
2 tablespoons oil
1 teaspoon cumin
1 teaspoon dried oregano (optional)
1 teaspoon dried dill or 3 cubes Dorot Gardens Frozen Dill (optional)
2 eggs, beaten
Gefen Olive Oil, for frying
Place grated zucchini in colander. Add salt and toss. Let it sit for 10 minutes. Drain zucchini using a clean towel or cheese cloth.
Combine zucchini, flour, cheese, scallions, oil, seasonings, and egg.
Heat olive oil in large skillet over medium heat. Scoop one tablespoon of batter, flattening with spatula. Cook until bottom is golden. Flip and cook another two minutes.
