Lima beans are packed with protein and fiber and are low in fat, making them a nutritious and filling addition to tonight’s chicken dinner.
1/2 pound lima beans
3 cups water
2 tablespoons oil
1 chicken, quartered
1 clove garlic, chopped
1 large onion, chopped
1 green pepper, chopped
1 cup carrots, coarsely chopped
1 teaspoon paprika
1 and 3/4 teaspoons salt
1/4 teaspoon pepper
Cook beans in water for 20 minutes.
Remove from heat, drain, and set aside for one hour.
Heat oil in pan, add chicken pieces and brown. Remove from pan.
Add garlic, onions, green pepper and carrots to pan; sauté until limp.
Add spices, cook for two minutes, stirring constantly.
Add chicken and beans to sautéed vegetables.
Cook covered at 350 degrees Fahrenheit for one hour and 15 minutes or until chicken is tender.
