Ingredients

Chicken Poppers on the Bone

Roasted Cauliflower

  • 24 ounces frozen mini cauliflower florets

  • 2 tablespoons oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

Directions

Prepare the Chicken Poppers on the Bone

1.

Smear the mayonnaise on the top and bottom of each piece of chicken. Coat in cornflakes crumbs.

2.

Bake covered at 350 degrees Fahrenheit for one hour, then uncovered for 30 minutes.

3.

In a bowl, mix honey, hot sauce, and garlic powder. Pour over chicken.

4.

Bake uncovered for 10 minutes.

Prepare the Cauliflower

1.

In a bowl, mix cauliflower with the oil and spices.

2.

Spread out on a baking sheet and roast at 400 degrees Fahrenheit for 30 minutes.

Notes:

Freeze baked chicken poppers and roasted cauliflower separately, apply sauce after reheating, and reheat in the oven for best texture; good for up to two months.
