Chickpea Avocado Salad

Ingredients

For the Salad

  • 1 (15-ounce) can Haddar Chickpeas

  • 2 ripe avocados, diced

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • 1 green pepper, diced

  • 1 red onion, diced

For the Dressing

  • juice of 3 limes and zest of 1 lime

  • 1 and 1/2 teaspoons cayenne pepper

  • 3 tablespoons Bartenura Olive Oil

  • 1/2 teaspoon distilled vinegar

Directions

To Make the Salad

1.

In a medium bowl, combine chickpeas, avocado, peppers, and onion.

In a container with a lid, combine the lime juice, zest, pepper, oil, and vinegar. Seal container and shake. Pour over salad and toss.
