A delicious chocolate cake with hints of coffee and rum.
7 eggs
3 cups sugar
2 vanilla sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2-4 capfuls of rum extract (adjust to your liking)
1 cup cocoa
1 cup hot water
1 cup oil
1 tablespoon instant coffee
Preheat oven to 350 degrees Fahrenheit.
In mixer, beat eggs with sugar and vanilla sugar.
When eggs and sugar are light yellow in color, add flour, baking powder, salt, and rum extract and mix till combined.
Dilute cocoa and coffee in hot water. Add oil and whisk till mostly combined.
Add cocoa mixture to mixer and mix till combined. Scrape down sides of bowl and beat till no more white streaks are visible.
Pour batter into a lined 10 x 14 inch pan. Bake until a toothpick comes out mostly clean from the center of the cake, 50-65 minutes.
