Chocolate Chip Cinnamon Sugar Spelt Cookies

For the Cookies
Preheat oven to 350 degrees Fahrenheit and grease a Gefen Easy Baking Parchment Paper.
Whisk all dry ingredients well, and then add wet ingredients. Slowly fold in the chocolate chips at the end.
From the cookie dough mixture, form tablespoon-sized balls and drop them onto the parchment paper.
Bake for 20 minutes on oven's middle rack until firm.
If you prefer, you can substitute an egg for the ground flax meal and carob chips for chocolate.
