Chocolate Chip S’more Cookies

Ingredients

Main ingredients

  • 3/4 cup oil and 1/2 tablespoon for the chocolate chips later

  • 2 eggs

  • 1 cup brown sugar

  • 1 teaspoon vanilla

  • 3/4 teaspoon baking soda

  • 2 and 1/2 cups flour

  • 1 cup chocolate chips

  • 1 and 1/2 cups mini marshmallows

Directions

Prepare the Cookies

1.

Mix the oil, eggs and brown sugar in a large bowl. Add vanilla, baking soda and flour to the bowl and mix together.

Roll walnut sized circles and press down onto cookie sheet, slightly spread apart from each other. Place firmly three or four marshmallows to the center of each cookie.

Bake for nine minutes on 400 Fahrenheit.

Meanwhile place the chocolate chips and 1/2 tablespoon oil in a small pot on medium heat, mixing regularly until it is a smooth, thick paste. Place the melted chocolate in a zip lock bag and once cookies are out of the oven, cut a mini hole in the corner and zip zag the chocolate across.

These are best eaten hot. Enjoy! And eat s’more! (some more).

Notes:

A note on recipe testing: The amount of oil in this recipe has been adjusted. When we tested these cookies we added an additional 1/2 teaspoon salt with the dry ingredients, chilled the dough for an hour and a half before baking, and baked for 12 minutes on 350 degrees Fahrenheit. Thy came out thicker than pictured, but definitely tasty.

Yes my dough looks very oily too….
Is it supposed to be 3/4 – 1 cup?

Is the 1 and 3/4 cup oil measurement for the cookie dough the proper amount? Using this amount, the dough was too oily. Please confirm amount of oil in dough.
