Great take-along snack!
2 cups old-fashioned oats (use gluten-free if needed)
3/4 cup halved almonds
1/2 cup sweetened, shredded coconut
1/2 cup raw cashews
1/3 cup brown sugar, packed
1 and 1/2 teaspoons Gefen Ground Allspice
1 teaspoon Gefen Ground Cinnamon
1/4 cup (1/2 stick) margarine (use soy-free if needed)
2 tablespoons Gefen Honey
1 cup (packed) pitted dates, chopped into thirds
Preheat oven to 300 degrees Fahrenheit.
Mix first seven ingredients in a large bowl. Melt margarine with honey in a small, heavy saucepan over low heat. Pour over granola mixture and toss well.
Spread mixture on baking sheet. Bake 20 minutes, stirring occasionally. Add dates; mix to separate clumps. Continue baking until granola is golden brown, stirring frequently, about 15 minutes longer.
Cool completely and store in airtight container.
