This is one of our favorite chunky cookie recipes, made healthier with the substitution of whole wheat for white flour and oil for margarine. Yields about 20-24 large or 40 small cookies
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon Tuscanini Sea Salt
1 cup oil
3/4 cup brown sugar
1/4 cup white sugar
2 eggs
1 teaspoon Gefen Vanilla Extract
2 and 1/2 cups rolled oats
1/2 cup Glicks Chocolate Chips or chocolate chunks
1/2 cup Gefen Dried Cranberries
1/2 cup chopped pecans
1/2 cup white chocolate chips
1/2 cup cornflakes
1/2 cup rice krispies
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a large bowl, combine flour, baking soda, baking powder, and sea salt.
In the bowl of your mixer, cream oil and sugars together. Add in eggs and vanilla and mix well. Slowly add flour mixture and rolled oats; mix until just combined.
Fold in by hand a half a cup each of your choice of up to three add-ins.
For large cookies, drop quarter-cup-sized pieces of cookie dough onto a lined baking sheet. For smaller cookies, scoop approximately two tablespoons of dough per cookie. Leave space between them to allow them to grow.
Bake on the center rack of the oven. Bake larger cookies for 12 minutes, and smaller cookies for eight minutes.
Cookies may look underdone, but will firm up as they cool.

Just wondering about the add-ins – on the recipe amount it says 1 cup of each, but in the method, it says to add a half cup. How much should I use if I only want to use one or 2 add-ins?

Add-ins I used were raisins and walnuts. I drizzled some chocolate on top. They were gone fast!
AMAZING!! I don’t generally like oatmeal cookies but these were great! I added a little less of all the addings besides for pecans, and felt that the cornflakes were unnecessary.
Also was a great way to get rid of rice crispies and cornflakes from school lunch pickup :).

I made these with chunks of sugar-free chocolate and swapped 3/4 cup erythritol for all the sugar. My kids had no idea it wasn’t a normal dessert. Thanks!
