Exceptionally moist fried chicken with an irresistible balance of flavor in the marinade from the lemon, lime, and orange juices and the rich beer.
2 large eggs, beaten
2 tablespoons freshly squeezed lime juice
3 tablespoons freshly squeezed lemon juice
1/4 cup freshly squeezed orange juice
1/4 cup beer
1/4 cup lemon-lime soda
salt, to taste
pepper, to taste
1 and 1/2 to 2 pounds chicken cutlets, cut into 1/2-inch thick strips
1 and 1/2 cups Gefen Plain Breadcrumbs
oil, for frying
In medium bowl whisk egg, lime juice, lemon juice, orange juice, beer, and soda. Season with salt and pepper. Add chicken and marinate in the refrigerator for two hours.
Place bread crumbs in a shallow dish. Working with one strip at a time, remove chicken from marinade and dredge in bread crumbs.
Heat oil in a small saucepan. When oil is hot, add chicken and fry until golden brown, about two minutes.
